ET VOILA …” we did it! It was not easy.

VOILA, a sparkling wine, méthode classique, made from 100% Pinot Nero. Certainly, unusual in Piedmont, region of Italy, but to no surprise it happened when Cascina Baricchi and House of VOILA wanted to realize an idea to celebrate VOILA's 20th Anniversary.

It started with the separation of the skin from the must. This was followed by slow fermentation in steel tanks at a controlled temperature of 22°C in order to achieve the highest concentration of aromas and flavors. After that, the base wine stayed in the steel for another six months.ET_VOILA_20_ANNNow bottles were filled where the second fermentation took place: this phase began in April 2018 and lasted 72 months (!) Because of the dégorgement, only 2000 bottles of this rarity are made. The longer stay on the lees gives this wine its extremely fine perlage, the beautiful straw yellow color with golden reflections. The range of its feelings is endless: sage, peppermint, candied citrus, apricots ... Fresh, consistent, this sparkling wine is incomparable. Seldom you taste a sparkling wine whose foam is so creamy and silky.

VOL 12.5%, Acid 7.5 g / l, residual sugar 5 g / l, Vegan - 750 ml.
